Serves:
Ingredients
- 4 Seville oranges
- 3 cups granulated sugar
- 1 lemon
- 4 cups water
Instructions
-
Cut the Seville oranges and lemon in half and squeeze out the juice. Set the juice aside.
-
Remove and discard the pith (white part) and seeds from the squeezed orange halves.
-
Thinly slice the orange halves, keeping the peel intact, and place them in a large pot.
-
Add the water and bring it to a boil. Let it simmer for 40 minutes, until the peel is soft.
-
Add the sugar and the reserved citrus juice to the pot. Stir until the sugar dissolves.
-
Increase the heat and bring the mixture to a rolling boil. Let it cook for about 20 minutes, stirring occasionally, until it thickens and reaches a marmalade consistency.
-
Remove the pot from the heat and let the marmalade cool for a few minutes.
-
Pour the marmalade into sterilized jars and seal them while hot.
-
Allow the marmalade to cool completely before refrigerating.
