Ingredients

  • 2 medium beets, peeled and grated
  • 1 Granny Smith apple, cored and grated
  • 3 tbsp olive oil
  • 1 tbsp apple cider vinegar
  • 1 tbsp honey
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp chopped fresh parsley

Instructions

  1. In a large mixing bowl, combine grated beets and apple.

  2. In a small mixing bowl, whisk together olive oil, apple cider vinegar, honey, salt, and black pepper.

  3. Pour the dressing over the beet and apple mixture and toss well.

  4. Add chopped parsley and toss again.

  5. Serve chilled.
