  • 1 pound carrots, peeled and sliced into 1/2 inch thick coins
  • 2 tablespoons olive oil
  • 2 tablespoons balsamic vinegar
  • 2 tablespoons honey
  • Salt and pepper to taste
  • Fresh parsley, for garnish


  1. Preheat your oven to 400°F (200°C).

  2. In a small bowl, whisk together the olive oil, balsamic vinegar, and honey.

  3. Place the sliced carrots on a baking sheet and drizzle with the balsamic glaze. Toss to coat evenly.

  4. Season the carrots with salt and pepper.

  5. Roast in the preheated oven for 15-20 minutes, or until the carrots are tender and caramelized.

  6. Remove the carrots from the oven and garnish with fresh parsley.
