Ingredients

  • 1 cup cooked brown rice
  • 2 boiled eggs
  • 1/2 cup fresh parsley, finely chopped
  • 1/4 cup red onion, finely chopped
  • 1/4 cup cucumber, finely chopped
  • 1/4 cup cherry tomatoes, halved
  • 2 tablespoons lemon juice
  • 2 tablespoons olive oil
  • Salt to taste
  • Pepper to taste

Instructions

  1. In a large bowl, combine the cooked brown rice, chopped parsley, red onion, cucumber, and cherry tomatoes.

  2. In a separate small bowl, whisk together the lemon juice, olive oil, salt, and pepper.

  3. Pour the dressing over the rice mixture and toss well to coat.

  4. Peel the boiled eggs and slice them into quarters.

  5. Place the egg quarters on top of the tabbouleh.

  6. Serve the brown rice tabbouleh with eggs and parsley chilled or at room temperature.
