How To Make Singapore Noodles

Ingredients

  • 8 oz rice vermicelli noodles
  • 2 tbsp vegetable oil
  • 1 onion, sliced
  • 2 cloves garlic, minced
  • 1 red bell pepper, sliced
  • 1 carrot, julienned
  • 1 cup cabbage, shredded
  • 8 oz cooked chicken breasts, sliced
  • 8 oz large shrimp, peeled and deveined
  • 2 tbsp curry powder
  • 2 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tbsp fish sauce
  • 1 tsp sugar
  • 1/4 cup chicken broth
  • 2 green onions, sliced
  • Fresh cilantro, for garnish

Instructions

  1. Cook the rice vermicelli noodles according to the package instructions. Drain and set aside.

  2. Heat the vegetable oil in a large skillet or wok over medium-high heat. Add the onions and garlic and cook until the onions are softened.

  3. Add the red bell pepper, carrot, and cabbage to the skillet. Cook for 2-3 minutes until the vegetables are slightly tender.

  4. Push the vegetables to one side of the skillet and add the chicken and shrimp to the other side. Cook until the meat is cooked through and the shrimp turns pink.

  5. In a small bowl, mix together the curry powder, soy sauce, oyster sauce, fish sauce, sugar, and chicken broth. Pour the sauce over the noodles and vegetables in the skillet. Stir until everything is well coated in the sauce.

  6. Cook for an additional 2-3 minutes until everything is heated through.

  7. Remove from heat and stir in the green onions.

  8. Serve the Singapore noodles hot, garnished with fresh cilantro.
