- 1.5 lbs boneless, skinless chicken thighs, cut into bite-sized pieces
- 1 can (14 oz) coconut milk
- 1/4 cup red curry paste
- 1 red bell pepper, sliced
- 1 onion, sliced
- 2 cloves garlic, minced
- 1 tbsp fresh ginger, grated
- 2 tbsp fish sauce
- 1 tbsp brown sugar
- Juice of 1 lime
- Fresh cilantro, for garnish
- Cooked rice, for serving
Instructions

In a slow cooker, combine the chicken, coconut milk, red curry paste, bell pepper, onion, garlic, ginger, fish sauce, and brown sugar. Stir well to combine.
