  • 1.5 lbs boneless, skinless chicken thighs, cut into bite-sized pieces
  • 1 can (14 oz) coconut milk
  • 1/4 cup red curry paste
  • 1 red bell pepper, sliced
  • 1 onion, sliced
  • 2 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 2 tbsp fish sauce
  • 1 tbsp brown sugar
  • Juice of 1 lime
  • Fresh cilantro, for garnish
  • Cooked rice, for serving

Instructions

  1. In a slow cooker, combine the chicken, coconut milk, red curry paste, bell pepper, onion, garlic, ginger, fish sauce, and brown sugar. Stir well to combine.

  2. Cover and cook on low heat for 4 hours.

  3. Stir in the lime juice before serving.

  4. Serve the Thai chicken curry over cooked rice and garnish with fresh cilantro.
