How To Make Red Bell Pepper and Chickpea Stew Recipe
A hearty stew with a spicy kick, perfect for a cozy night in.
Serves:
Ingredients
- 1 tbsp olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 red bell pepper, chopped
- 1 can chickpeas, drained and rinsed
- 1 can diced tomatoes
- 2 cups vegetable broth
- 2 tsp smoked paprika
- 1/2 tsp cayenne pepper
- Salt and pepper, to taste
- Chopped parsley, for garnish
Instructions

In a large pot, heat the olive oil over medium heat.

Add the onion and garlic and cook until softened, about 5 minutes.

Add the red bell pepper and cook for another 5 minutes.

Add the chickpeas, diced tomatoes, vegetable broth, smoked paprika, and cayenne pepper.

Bring to a simmer and let cook for 20 minutes.

Season with salt and pepper to taste.
