Serves:

Ingredients

  • 1 tbsp olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 1 can chickpeas, drained and rinsed
  • 1 can diced tomatoes
  • 2 cups vegetable broth
  • 2 tsp smoked paprika
  • 1/2 tsp cayenne pepper
  • Salt and pepper, to taste
  • Chopped parsley, for garnish

Instructions

  1. In a large pot, heat the olive oil over medium heat.

  2. Add the onion and garlic and cook until softened, about 5 minutes.

  3. Add the red bell pepper and cook for another 5 minutes.

  4. Add the chickpeas, diced tomatoes, vegetable broth, smoked paprika, and cayenne pepper.

  5. Bring to a simmer and let cook for 20 minutes.

  6. Season with salt and pepper to taste.

  7. Serve hot, garnished with chopped parsley.
