Ingredients

  • 1 lb mushrooms, sliced
  • 1 onion, chopped
  • 3 cloves of garlic, minced
  • 2 tbsp olive oil
  • 2 tbsp tomato paste
  • 1 cup diced tomatoes
  • 1 cup vegetable broth
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • 1 bay leaf
  • Salt and pepper to taste
  • Chopped fresh parsley for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onions and garlic, sauté until onions are translucent.

  2. Add mushrooms to the pot and cook for about 5 minutes, until they start to release their moisture.

  3. Stir in tomato paste and cook for another minute.

  4. Add diced tomatoes, vegetable broth, oregano, thyme, bay leaf, salt, and pepper. Bring to a boil, then reduce heat and simmer for 30 minutes, covered.

  5. Remove bay leaf and garnish with fresh parsley before serving.
