How To Make Chicken and Vegetable Stew

Ingredients
- 1 lb chicken breast, diced
- 1 onion, chopped
- 2 carrots, sliced
- 2 celery stalks, diced
- 2 cloves of garlic, minced
- 1 cup green beans, trimmed and cut into bite-sized pieces
- 1 cup corn kernels
- 4 cups chicken broth
- 1 bay leaf
- 1 tsp dried thyme
- Salt and pepper to taste
Instructions

Heat oil in a large pot over medium heat. Add chicken and cook until browned. Remove from the pot and set aside.

In the same pot, add onion, carrots, celery, and garlic. Cook until vegetables are softened.

Add green beans, corn, chicken broth, bay leaf, dried thyme, salt, and pepper. Bring to a boil.

Reduce heat and simmer for 20 minutes, or until vegetables are tender.

Return the chicken to the pot and cook for an additional 5 minutes, or until the chicken is cooked through.

Remove the bay leaf before serving.
