Ingredients

  • 1 lb dried navy beans, rinsed and drained
  • 4 cups vegetable broth
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 3 carrots, chopped
  • 3 celery stalks, chopped
  • 1 tbsp tomato paste
  • 1 bay leaf
  • 1 tsp smoked paprika
  • 1 tsp dried thyme
  • Salt and black pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a slow cooker, add navy beans, vegetable broth, onion, garlic, carrots, celery, tomato paste, bay leaf, smoked paprika, dried thyme, salt, and black pepper.

  2. Stir well to combine.

  3. Cover and cook on low for 6-7 hours or until the beans are tender.

  4. Discard the bay leaf and adjust the seasoning if needed.

  5. Serve hot with freshly chopped parsley on top.
