  • 4 slices of bacon, chopped
  • 1 medium onion, diced
  • 4 medium potatoes, peeled and diced
  • 4 cups of chicken broth
  • 1 cup of milk
  • Salt and pepper to taste
  • Chopped fresh chives, for garnish

Instructions

  1. In a large pot, cook the bacon over medium heat until crispy. Remove the bacon and set aside, leaving the drippings in the pot.

  2. Add the diced onion to the pot and cook until soft and translucent.

  3. Add the diced potatoes and chicken broth to the pot. Bring to a boil and then reduce heat to simmer until the potatoes are tender, about 15 minutes.

  4. Using a blender or immersion blender, blend the soup until creamy. Return to the pot and stir in the milk. Cook for another 5 minutes.

  5. Season with salt and pepper to taste. Serve hot, garnished with chopped fresh chives and crispy bacon.
