Ingredients

  • 2 lobster tails, shells removed and chopped
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 2 tablespoons of butter
  • 2 tablespoons of all-purpose flour
  • 3 cups of seafood stock
  • 1 cup of heavy cream
  • 1/4 cup of brandy
  • 1 teaspoon of paprika
  • Salt and pepper to taste
  • Chives, chopped (for garnish)

Instructions

  1. In a large pot, melt the butter over medium heat. Add the onion and garlic and sauté until translucent.

  2. Add the chopped lobster tails to the pot and cook for 5 minutes, stirring occasionally.

  3. Sprinkle the flour over the lobster mixture and stir well to coat.

  4. Gradually pour in the seafood stock, stirring constantly to prevent lumps from forming.

  5. Bring the mixture to a boil, then reduce the heat and simmer for 15 minutes.

  6. Use an immersion blender or transfer the soup to a blender and blend until smooth.

  7. Return the soup to the pot and stir in the heavy cream and brandy. Season with paprika, salt, and pepper.

  8. Simmer for an additional 10 minutes to allow the flavors to meld together.

  9. Serve hot, garnished with chopped chives.
