  • 6 slices of bacon, chopped
  • 1 onion, diced
  • 3 cloves of garlic, minced
  • 4 cups of chicken broth
  • 4 cups of peeled and diced potatoes
  • 1 cup of heavy cream
  • Salt and pepper to taste
  • Chopped chives for garnish

Instructions

  1. In a large pot, cook the bacon over medium heat until crispy. Remove the bacon and set aside, leaving the bacon grease in the pot.

  2. Add the diced onion and minced garlic to the pot and cook until the onion is translucent, about 5 minutes.

  3. Add the chicken broth and diced potatoes to the pot. Bring to a boil, then reduce heat and simmer until the potatoes are tender, about 15 minutes.

  4. Using a potato masher or immersion blender, partially mash the potatoes until desired consistency is reached.

  5. Stir in the heavy cream and cooked bacon. Season with salt and pepper to taste.

  6. Cook for an additional 5 minutes, until warmed through.

  7. Serve hot, garnished with chopped chives.
