Ingredients

  • 1 turkey carcass
  • 8 cups water
  • 1 onion, chopped
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 2 cloves garlic, minced
  • 1 bay leaf
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Instructions

  1. Place the turkey carcass in a large pot and cover with water. Bring to a boil, then reduce heat and simmer for 2 hours.

  2. Remove the turkey carcass from the pot and let it cool. Once cool enough to handle, remove any remaining meat from the bones and set aside.

  3. Return the bones to the pot and add the onion, carrots, celery, garlic, bay leaf, dried thyme, salt, and pepper. Simmer for an additional 2 hours.

  4. Remove the bones and bay leaf from the soup. Stir in the reserved turkey meat and heat through.

  5. Serve the soup hot and enjoy!
