How To Make Turkey Stock

Ingredients

  • 1 turkey carcass
  • 1 onion, quartered
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 4 garlic cloves, smashed
  • 1 bay leaf
  • 1 teaspoon dried thyme
  • 10 cups water
  • Salt and pepper to taste

Instructions

  1. In a large pot, add the turkey carcass, onion, carrots, celery, garlic, bay leaf, thyme, and water.

  2. Bring the mixture to a boil over high heat, then reduce the heat to low and let it simmer for 4 hours, skimming off any foam that rises to the surface.

  3. Remove the pot from the heat and strain the stock through a fine mesh sieve, discarding the solids.

  4. Season the stock with salt and pepper to taste.

  5. Let the stock cool completely, then store it in airtight containers in the refrigerator or freezer until ready to use.
