  • 1 whole chicken carcass
  • 1 onion, quartered
  • 2 carrots, roughly chopped
  • 2 celery stalks, roughly chopped
  • 3 cloves of garlic
  • 1 bay leaf
  • 1 teaspoon of whole peppercorns
  • 1 tablespoon of salt
  • 8 cups of water

Instructions

  1. Place the chicken carcass, onion, carrots, celery, garlic, bay leaf, peppercorns, and salt in a large pot.

  2. Pour in the water and bring to a boil over high heat.

  3. Reduce heat to low and let simmer for 4 hours, skimming any impurities that rise to the surface.

  4. Remove from heat and strain the stock through a fine mesh sieve, discarding the solids.

  5. Allow the stock to cool before transferring to jars or containers.

  6. Refrigerate for up to 5 days or freeze for up to 3 months.
