Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1/2 cup unsalted butter, melted
  • 1 cup milk
  • 2 lemons, zested and juiced
  • 2 eggs
  • 1 tsp vanilla extract
  • 1/2 cup powdered sugar (for glaze)
  • 1 tbsp lemon juice (for glaze)

Instructions

  1. Preheat the oven to 375°F (190°C) and line a muffin tin with paper liners.

  2. In a large mixing bowl, combine the flour, sugar, baking powder, and salt.

  3. In a separate bowl, whisk together the melted butter, milk, lemon juice, lemon zest, eggs, and vanilla extract.

  4. Pour the wet ingredients into the dry ingredients and stir until just combined.

  5. Divide the batter evenly among the muffin cups, filling each about 3/4 full.

  6. Bake for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

  7. While the muffins are baking, prepare the glaze by whisking together the powdered sugar and lemon juice until smooth.

  8. Once the muffins are done, remove them from the oven and let them cool for a few minutes.

  9. Drizzle the glaze over the warm muffins and allow it to set before serving.
