  • 2 cups watercress
  • 200g Cheshire cheese, crumbled
  • 1/2 red onion, thinly sliced
  • 1/4 cup toasted pine nuts
  • 1/4 cup dried cranberries
  • 1/4 cup balsamic vinegar
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. In a large salad bowl, combine the spinach, watercress, Cheshire cheese, red onion, pine nuts, and dried cranberries.

  2. In a small bowl, whisk together the balsamic vinegar, extra virgin olive oil, salt, and pepper.

  3. Drizzle the dressing over the salad and toss gently to coat all the ingredients.
