- 4 cups fresh spinach leaves
- 2 cups watercress
- 200g Cheshire cheese, crumbled
- 1/2 red onion, thinly sliced
- 1/4 cup toasted pine nuts
- 1/4 cup dried cranberries
- 1/4 cup balsamic vinegar
- 2 tbsp extra virgin olive oil
- Salt and pepper to taste
Instructions

In a large salad bowl, combine the spinach, watercress, Cheshire cheese, red onion, pine nuts, and dried cranberries.

In a small bowl, whisk together the balsamic vinegar, extra virgin olive oil, salt, and pepper.
