  • 4 ripe tomatoes
  • 1 red bell pepper
  • 1 cucumber
  • 1 small red onion
  • 2 cloves of garlic
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • Fresh basil leaves, for garnish

Instructions

  1. Roughly chop the tomatoes, red bell pepper, cucumber, and red onion.

  2. In a blender or food processor, add the chopped vegetables and garlic cloves.

  3. Blend until smooth.

  4. Add the olive oil, red wine vinegar, smoked paprika, salt, and pepper to the blender.

  5. Blend again until well combined.

  6. Taste and adjust seasoning if needed.

  7. Transfer the gazpacho to a serving bowl and refrigerate for at least 1 hour to chill and allow the flavors to meld.
