How To Make Chipotle Gazpacho

Ingredients
- 4 medium tomatoes, quartered
- 1 cucumber, peeled and chopped
- 1 red bell pepper, seeded and chopped
- 1 small red onion, chopped
- 2 cloves of garlic, minced
- 2 chipotle peppers in adobo sauce
- 2 tablespoons of extra virgin olive oil
- 2 tablespoons of red wine vinegar
- 1 teaspoon of salt
- 1/2 teaspoon of black pepper
- 1/2 teaspoon of sugar
Instructions

Place the tomatoes, cucumber, red bell pepper, red onion, garlic, chipotle peppers, olive oil, vinegar, salt, black pepper, and sugar in a blender or food processor.

Blend until smooth and well combined, adding a little water if needed to reach desired consistency.

Taste and adjust seasonings as needed.

Transfer the gazpacho to a large bowl or individual serving bowls.

Refrigerate for at least 2 hours to allow the flavors to meld together.
