Ingredients

  • 4 medium tomatoes, quartered
  • 1 cucumber, peeled and chopped
  • 1 red bell pepper, seeded and chopped
  • 1 small red onion, chopped
  • 2 cloves of garlic, minced
  • 2 chipotle peppers in adobo sauce
  • 2 tablespoons of extra virgin olive oil
  • 2 tablespoons of red wine vinegar
  • 1 teaspoon of salt
  • 1/2 teaspoon of black pepper
  • 1/2 teaspoon of sugar

Instructions

  1. Place the tomatoes, cucumber, red bell pepper, red onion, garlic, chipotle peppers, olive oil, vinegar, salt, black pepper, and sugar in a blender or food processor.

  2. Blend until smooth and well combined, adding a little water if needed to reach desired consistency.

  3. Taste and adjust seasonings as needed.

  4. Transfer the gazpacho to a large bowl or individual serving bowls.

  5. Refrigerate for at least 2 hours to allow the flavors to meld together.

  6. Serve chilled, garnished with a sprig of fresh cilantro or a slice of lime.
