Ingredients
- 1 small pumpkin, peeled and cubed
- 2 medium potatoes, peeled and diced
- 1 onion, chopped
- 2 cloves of garlic, minced
- 4 cups vegetable broth
- 1 cup coconut milk
- 1 tsp ground cumin
- 1/2 tsp ground nutmeg
- Salt and pepper to taste
- Fresh parsley, for garnish

In a large pot, heat olive oil over medium heat. Add onions and garlic, cook until translucent.

Add pumpkin and potatoes, cook for 5 minutes, stirring occasionally.

Pour in vegetable broth and coconut milk, bring to a boil. Reduce heat and let it simmer for 20 minutes or until vegetables are tender.

Using an immersion blender, blend the soup until smooth and creamy. If you don’t have an immersion blender, transfer the soup to a blender in batches and blend until smooth.
