  • 2 cups cooked rice
  • 1 cup mixed fruit (such as diced mango, pineapple, and grapes)
  • 1/2 cup toasted cashews
  • 1/4 cup chopped cilantro
  • 2 tablespoons lemon juice
  • 1 tablespoon soy sauce
  • 1 tablespoon vegetable oil
  • 1 teaspoon minced garlic
  • Salt and pepper to taste

Instructions

  1. In a large pan, heat vegetable oil over medium heat. Add minced garlic and cook for 1 minute.

  2. Add cooked rice to the pan and stir well to combine with the garlic.
