How To Make Vegetable Noodle Soup Recipe

A hearty soup filled with veggies and noodles.

Serves:

Ingredients

  • 8 oz. noodles
  • 4 cups of vegetable broth
  • 2 cups of water
  • 2 medium carrots, sliced
  • 1 medium onion, chopped
  • 2 garlic cloves, minced
  • 1 tbsp of olive oil
  • 2 tsp of dried thyme leaves
  • Salt and pepper to taste
  • 1 cup of frozen peas
  • 1 cup of corn kernels

Instructions

  1. Heat olive oil in a large pot and sauté garlic and onion until onion is transparent.

  2. Add carrots, thyme, salt and pepper and sauté for about 5 minutes.

  3. Add vegetable broth, water and bring to a boil.

  4. Add noodles and cook until tender.

  5. Add peas, corn and stir until thoroughly cooked and heated through.

  6. Serve hot and enjoy!
