Ingredients
- 1 cup mung beans, soaked overnight
- 1 tablespoon cooking oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 tomato, diced
- 1 carrot, diced
- 1 potato, diced
- 4 cups vegetable broth
- 1 teaspoon cumin powder
- 1 teaspoon paprika
- Salt and pepper to taste
- Fresh cilantro, for garnish

In a large pot, heat the cooking oil over medium heat. Add the onions and garlic, and sauté until fragrant.

Add the carrots, potatoes, mung beans, cumin powder, and paprika. Stir everything together.
