  • 1 whole chicken, cut into pieces
  • 8 cups chicken broth
  • 2 carrots, peeled and sliced
  • 2 celery stalks, sliced
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 bay leaf
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 8 ounces egg noodles
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large pot, bring the chicken broth to a boil.

  2. Add the chicken pieces, carrots, celery, onion, garlic, bay leaf, dried thyme, salt, and pepper to the pot.

  3. Reduce heat to low and simmer for 30 minutes, or until the chicken is cooked through and tender.

  4. While the soup is simmering, cook the egg noodles according to package instructions. Drain and set aside.

  5. Remove the chicken pieces from the pot and let them cool slightly. Shred the chicken meat and discard the bones and skin.

  6. Return the shredded chicken to the pot and add the cooked noodles.

  7. Simmer for an additional 10 minutes to allow the flavors to meld together.

  8. Serve hot, garnished with fresh parsley.
