Ingredients

  • 4 jalapeno peppers, diced
  • 1 onion, chopped
  • 3 cloves of garlic, minced
  • 4 cups of vegetable broth
  • 1 cup of heavy cream
  • 1 tsp of cumin
  • 1 tsp of salt
  • 1/2 tsp of black pepper
  • 1/4 cup of chopped cilantro
  • 1 lime, juiced

Instructions

  1. In a large pot, sauté the jalapeno peppers, onion, and garlic until softened.

  2. Add the vegetable broth, cumin, salt, and black pepper. Bring to a boil, then reduce heat and simmer for 10 minutes.

  3. Use an immersion blender or transfer the soup to a blender and blend until smooth.

  4. Return the soup to the pot and stir in the heavy cream. Heat over medium heat for 5 minutes.

  5. Remove from heat and stir in the lime juice and chopped cilantro.

  6. Serve hot and garnish with additional cilantro, if desired.
