Ingredients
- 1 cup dried split peas
- 4 cups vegetable broth
- 1 onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 2 cloves of garlic, minced
- 1 bay leaf
- 1 tsp dried thyme
- Salt and pepper, to taste

Rinse the split peas under cold water and set aside.

In a large pot, heat some oil and sauté the onion, carrots, celery, and garlic until softened.

Add the split peas, vegetable broth, bay leaf, thyme, salt, and pepper to the pot.

Bring the soup to a boil, then reduce the heat to low and let it simmer for 1 hour or until the split peas are tender.
