Ingredients

  • 1 lb ground beef
  • 1 onion, diced
  • 2 carrots, peeled and diced
  • 2 celery stalks, diced
  • 2 cloves of garlic, minced
  • 4 cups beef broth
  • 1 can diced tomatoes, undrained
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 cup frozen corn
  • 1 cup frozen peas

Instructions

  1. Set the Instant Pot to sauté mode and brown the ground beef until fully cooked.

  2. Add in the diced onion, carrots, celery, and minced garlic. Sauté for a few minutes until softened.

  3. Pour in the beef broth and diced tomatoes. Stir in the dried thyme, dried oregano, salt, and black pepper.

  4. Close the Instant Pot lid and set the valve to sealing. Cook on high pressure for 10 minutes.

  5. Once the cooking time is up, do a quick release of pressure.

  6. Stir in the frozen corn and peas. Put the lid back on and let it sit for a few minutes until the vegetables are heated through.

  7. Serve hot and enjoy!
