Ingredients

  • 8 oz fettuccini noodles
  • 2 boneless, skinless chicken breasts, cut into strips
  • 2 tbsp olive oil
  • 4 cloves garlic, minced
  • 1 onion, diced
  • 1 red bell pepper, sliced
  • 1 jalapeno pepper, seeded and minced
  • 1/4 cup tequila
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • Salt and pepper, to taste
  • Fresh cilantro, for garnish

Instructions

  1. Cook fettuccini noodles according to package instructions. Drain and set aside.

  2. Season chicken strips with salt and pepper. In a large skillet, heat olive oil over medium heat. Add chicken and cook until golden brown and cooked through, about 5-7 minutes. Remove chicken from skillet and set aside.

  3. In the same skillet, add garlic, onion, red bell pepper, and jalapeno pepper. Cook until vegetables are tender, about 5 minutes.

  4. Pour in tequila and cook for 1-2 minutes, or until the alcohol has evaporated.

  5. Stir in heavy cream and Parmesan cheese. Cook until sauce has thickened, about 3-5 minutes. Season with salt and pepper.

  6. Add cooked fettuccini noodles and cooked chicken to the skillet. Toss until everything is well coated with the sauce.

  7. Serve hot, garnished with fresh cilantro.
