How To Make Hearty Chicken and Rice Soup

Ingredients
- 1 lb chicken breast, boneless and skinless
- 1 cup white rice, uncooked
- 1 onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 6 cups chicken broth
- 1 tsp dried thyme
- 1 tsp dried rosemary
- Salt and pepper, to taste
Instructions

In a large pot, heat some oil over medium heat. Add the onions, carrots, celery, and garlic. Cook until vegetables are tender.

Push the vegetables to one side of the pot and add the chicken breasts. Cook until browned on both sides.

Add the chicken broth, rice, thyme, and rosemary to the pot. Stir everything together. Bring to a boil, then reduce heat and simmer for 30 minutes or until chicken is cooked through and rice is tender.

Remove the chicken from the pot and shred it using two forks. Return the chicken to the pot.

Season with salt and pepper to taste. Cook for an additional 5 minutes.
