Ingredients

  • 1 lb ground beef
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 2 stalks celery, diced
  • 2 cups beef broth
  • 1 can diced tomatoes
  • 1 cup elbow macaroni
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • salt and pepper, to taste

Instructions

  1. In a large pot, cook ground beef over medium heat until browned. Drain excess fat.

  2. Add onion and garlic to the pot and cook until onion is translucent.

  3. Stir in carrots, celery, beef broth, diced tomatoes, thyme, oregano, salt, and pepper. Bring to a boil.

  4. Reduce heat to low and simmer for 15 minutes, or until vegetables are tender.

  5. Meanwhile, cook macaroni according to package instructions. Drain and set aside.

  6. Add cooked macaroni to the soup and simmer for an additional 5 minutes.

  7. Serve hot and enjoy!
