  • 1 ham bone
  • 1 onion, chopped
  • 2 carrots, peeled and sliced
  • 2 celery stalks, sliced
  • 3 cloves of garlic, minced
  • 1 bay leaf
  • 1 teaspoon dried thyme
  • 4 cups chicken broth
  • 2 cups water
  • Salt and pepper to taste

Instructions

  1. Place the ham bone in a large pot and cover with water. Bring to a boil and then reduce heat to a simmer. Cook for 2 hours to extract the flavor from the bone.

  2. Remove the ham bone from the pot and set aside to cool. Remove any meat from the bone and chop it into small pieces. Discard any fat or gristle.

  3. In the same pot, heat a tablespoon of oil and sauté the onion, carrots, celery, and garlic until they begin to soften, about 5 minutes.

  4. Add the chopped ham, bay leaf, dried thyme, chicken broth, and water to the pot. Bring to a boil and then reduce heat to a simmer. Cook for an additional 2 hours, or until the vegetables are tender and the flavors have melded together.

  5. Season with salt and pepper to taste. Remove the bay leaf before serving.
