How To Make Pea and Ham Hock Soup

Ingredients
- 1 ham hock
- 1 onion, diced
- 2 cloves of garlic, minced
- 2 cups of dried split peas, rinsed
- 4 cups of chicken or vegetable broth
- 1 bay leaf
- Salt and pepper to taste
- Chopped fresh parsley, for garnish
Instructions

In a large pot, add the ham hock, diced onion, minced garlic, split peas, chicken or vegetable broth, and bay leaf. Bring to a boil over high heat.

Reduce heat to low and let the soup simmer for about 2 hours, or until the peas are tender and the ham hock is falling off the bone. Skim off any foam that forms on the surface.

Remove the ham hock from the pot and shred the meat, discarding the bone and fat. Return the shredded meat to the pot and season with salt and pepper to taste.

Use an immersion blender to blend the soup until smooth and creamy, or transfer to a blender and blend in batches until smooth.

Serve the pea and ham hock soup hot, garnished with chopped fresh parsley.
