  • 1 pound chicken breast, boneless and skinless
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves of garlic, minced
  • 1 tablespoon olive oil
  • 8 cups chicken broth (low sodium)
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the diced onion, carrots, celery, and minced garlic. Sauté for 5 minutes or until the vegetables are softened.

  2. Add the chicken breast to the pot and cook for 8-10 minutes, or until the chicken is cooked through.

  3. Remove the chicken breast from the pot and shred it using two forks. Set aside.

  4. Pour the chicken broth into the pot and bring it to a boil. Add the shredded chicken, dried thyme, dried rosemary, salt, and pepper. Reduce the heat to low and simmer for 15-20 minutes to allow the flavors to meld together.

  5. Remove from heat and let the soup cool slightly. Use as a base for any soup recipe.
