Ingredients

  • 1 lb ground beef
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (6 oz) tomato paste
  • 1 cup beef broth
  • 1 tbsp chili powder
  • 1 tsp cumin
  • 1/2 tsp smoked paprika
  • Salt and pepper, to taste
  • Optional toppings: shredded cheese, sour cream, green onions, diced avocado

Instructions

  1. In a large pot or Dutch oven, cook the ground beef over medium heat until browned. Drain any excess fat.

  2. Add the diced onion, minced garlic, and diced red bell pepper to the pot. Cook, stirring frequently, until the vegetables are softened.

  3. Add the diced tomatoes, kidney beans, tomato paste, beef broth, chili powder, cumin, smoked paprika, salt, and pepper to the pot. Stir well to combine all the ingredients.

  4. Bring the chili to a simmer, then reduce the heat to low. Cover and let it simmer for 30 minutes, stirring occasionally.

  5. Taste and adjust the seasoning if needed. Serve hot with your favorite toppings.
