Ingredients

  • 4 cups water
  • 1 dried kombu seaweed sheet
  • 1 cup bonito flakes
  • 1/4 cup soy sauce
  • 1 tablespoon mirin (optional)

Instructions

  1. In a medium pot, add water and kombu seaweed. Let it soak for 30 minutes.

  2. Bring the pot to a simmer over medium heat and remove the kombu just before the water starts to boil.

  3. Add the bonito flakes to the pot and simmer for 5 minutes.

  4. Strain the stock through a fine-mesh sieve or cheesecloth.

  5. Stir in soy sauce and mirin (optional) for added flavor.

  6. Serve hot as a base for soups, stews, or sauces.
