  • 1 tbsp olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 4 cups celery, chopped
  • 4 cups vegetable broth
  • 1 potato, peeled and diced
  • 1 bay leaf
  • Salt and pepper, to taste
  • 1/2 cup heavy cream (optional)
  • Fresh parsley, for garnish

Instructions

  1. Heat the olive oil in a large pot over medium heat. Add the onion and garlic, and cook until softened.

  2. Add the celery, potato, vegetable broth, bay leaf, salt, and pepper. Bring to a boil, then reduce heat and simmer for 20-25 minutes, until the vegetables are tender.

  3. Remove the bay leaf from the pot. Using an immersion blender, blend the soup until smooth and creamy. If you don’t have an immersion blender, carefully transfer the soup to a blender and blend in batches.

  4. Stir in the heavy cream, if using. Adjust the seasoning with salt and pepper, if needed.

  5. Ladle the soup into bowls and garnish with fresh parsley. Serve hot and enjoy!
