How To Make Chicken with Barley Soup

- 1 lb chicken breast, diced
- 1 cup pearl barley
- 1 onion, diced
- 2 carrots, sliced
- 2 stalks of celery, sliced
- 3 cloves of garlic, minced
- 6 cups chicken broth
- 1 teaspoon dried thyme
- 1 bay leaf
- Salt and pepper to taste

In a large pot, heat some oil over medium heat and sauté the onion, carrots, celery, and garlic until they are softened, about 5 minutes.

Add the diced chicken and cook until it is browned on all sides.

Add the pearl barley, chicken broth, dried thyme, bay leaf, salt, and pepper to the pot. Bring to a boil, then reduce the heat to low and cover the pot. Let the soup simmer for about 1 hour, or until the barley is tender and the chicken is cooked through.
