Ingredients
- 1 tablespoon olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 pound ground turkey
- 2 cups butternut squash, peeled and cubed
- 1 can (15 ounces) black beans, drained and rinsed
- 1 can (15 ounces) diced tomatoes
- 1 can (8 ounces) tomato sauce
- 1 cup chicken broth
- 2 tablespoons chili powder
- 1 tablespoon cumin
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- Optional toppings: shredded cheese, sour cream, chopped cilantro
Instructions

In a large pot, heat the olive oil over medium heat. Add the onion and garlic, and cook until the onion is translucent.

Add the ground turkey to the pot, and cook until browned, breaking it up into crumbles with a spoon.

Stir in the butternut squash, black beans, diced tomatoes, tomato sauce, chicken broth, chili powder, cumin, smoked paprika, salt, and pepper.

Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for 30 minutes, or until the butternut squash is tender.

Serve the chili hot, and top with shredded cheese, sour cream, and chopped cilantro if desired.
