Serves:

Ingredients

  • 1 medium butternut squash, peeled, seeded, and cubed
  • 1 onion, finely chopped
  • 2 cloves of garlic, minced
  • 1-inch ginger, grated
  • 1 green chili, slit
  • 1 tsp cumin seeds
  • 1 tsp turmeric powder
  • 1 tsp coriander powder
  • 1/2 tsp red chili powder
  • 1/2 tsp garam masala powder
  • 1 cup coconut milk
  • Salt to taste
  • Fresh coriander leaves for garnishing
  • 2 tbsp vegetable oil

Instructions

  1. Heat oil in a pan and add cumin seeds. Let them splutter.

  2. Add chopped onions and sauté until golden brown.

  3. Add minced garlic, grated ginger, and green chili. Sauté for a minute.

  4. Add turmeric powder, coriander powder, red chili powder, and salt. Mix well.

  5. Add cubed butternut squash and coat it with spices. Cook for 5 minutes.

  6. Pour coconut milk and mix. Cover the pan and let it simmer for 20-25 minutes or until the squash is tender.

  7. Sprinkle garam masala powder and give it a final stir.

  8. Garnish with fresh coriander leaves.

  9. Serve hot with steamed rice or Indian bread.
