How To Make Indian Butternut Squash Curry

Ingredients
- 1 medium butternut squash, peeled, seeded, and cubed
- 1 onion, finely chopped
- 2 cloves of garlic, minced
- 1-inch ginger, grated
- 1 green chili, slit
- 1 tsp cumin seeds
- 1 tsp turmeric powder
- 1 tsp coriander powder
- 1/2 tsp red chili powder
- 1/2 tsp garam masala powder
- 1 cup coconut milk
- Salt to taste
- Fresh coriander leaves for garnishing
- 2 tbsp vegetable oil
Instructions

Heat oil in a pan and add cumin seeds. Let them splutter.

Add chopped onions and sauté until golden brown.

Add minced garlic, grated ginger, and green chili. Sauté for a minute.

Add turmeric powder, coriander powder, red chili powder, and salt. Mix well.

Add cubed butternut squash and coat it with spices. Cook for 5 minutes.

Pour coconut milk and mix. Cover the pan and let it simmer for 20-25 minutes or until the squash is tender.

Sprinkle garam masala powder and give it a final stir.

Garnish with fresh coriander leaves.

Serve hot with steamed rice or Indian bread.
