Ingredients

  • 2 cans of artichoke hearts
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 4 cups of vegetable broth
  • 1 cup of heavy cream
  • Salt and pepper to taste
  • 1 cup of grated Parmesan cheese
  • 4 slices of bread
  • 2 tablespoons of olive oil

Instructions

  1. In a large pot, heat olive oil over medium heat. Add the diced onion and minced garlic, and sauté until onion is translucent.

  2. Drain and chop the artichoke hearts. Add them to the pot and cook for 5 minutes.

  3. Pour in the vegetable broth and bring to a boil. Reduce heat and let simmer for 15 minutes.

  4. Use an immersion blender or transfer the soup to a blender and puree until smooth.

  5. Return the soup to the pot and stir in the heavy cream. Season with salt and pepper to taste.

  6. Preheat the oven to 350°F (175°C). Cut the bread slices into thin sticks and place them on a baking sheet.

  7. Sprinkle grated Parmesan cheese over the bread sticks and bake for 10-12 minutes, or until golden and crispy.

  8. Serve the soup hot with a side of Parmesan sticks.
