How To Make Prawn & Broccoli Omelette

Ingredients
- 6 large eggs
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 cup cooked prawns, peeled and deveined
- 1 cup broccoli florets, blanched and chopped
- 1/2 cup grated cheddar cheese
- 2 tbsp chopped fresh parsley
- 2 tbsp olive oil
Instructions

In a large bowl, whisk together the eggs, salt, and black pepper.

Heat 1 tablespoon of olive oil in a non-stick frying pan over medium heat.

Add the prawns and broccoli to the pan and cook for 2-3 minutes until heated through.

Remove the prawns and broccoli from the pan and set aside.

Wipe the pan clean and heat the remaining tablespoon of olive oil over medium heat.

Pour the whisked eggs into the pan and cook for 2-3 minutes until the edges start to set.

Sprinkle the prawns, broccoli, grated cheese, and chopped parsley evenly over one half of the omelette.

Fold the omelette in half and cook for another 2-3 minutes until the cheese is melted and the omelette is cooked through.

Slide the omelette onto a serving plate and cut it into quarters.
