How To Make Vegan Slow Cooker Wild Rice Pilaf Recipe

A savory and filling vegan pilaf that is easy to make in a slow cooker.

Preparation: 10 minutes
Cooking: 4 hours on high or 6 hours on low
Total: 4 hours 10 minutes on high or 6 hours 10 minutes on low

Serves:

Ingredients

  • 1 cup wild rice, rinsed and drained
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 cup sliced mushrooms
  • 2 cups vegetable broth
  • 1 tbsp olive oil
  • 1 tsp thyme
  • salt and pepper to taste

Instructions

  1. In a slow cooker, add wild rice, onion, garlic, mushrooms, vegetable broth, olive oil, thyme, and salt and pepper.

  2. Stir to combine.

  3. Cover and cook on high for 4 hours or on low for 6 hours.

  4. Once cooked, stir and adjust seasoning as desired.

  5. Serve hot.
