Ingredients

  • 1 cup of green lentils
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 3 garlic cloves, minced
  • 1 tsp of cumin
  • 1 tsp of paprika
  • 4 cups of vegetable broth
  • 1 can of diced tomatoes
  • Salt and pepper to taste

Instructions

  1. Rinse lentils in cold water and drain.

  2. Add all ingredients to the slow cooker and stir well.

  3. Cook on low for 6 hours.

  4. Season with salt and pepper to taste.

  5. Serve hot and enjoy!
