How To Make Easy Slow Cooker Santa Fe Chicken

Ingredients
- 1.5 lbs of boneless, skinless chicken breasts
- 1 can (15 oz) of black beans, drained and rinsed
- 1 can (15 oz) of corn, drained
- 1 can (10 oz) of diced tomatoes with green chilies
- 1 cup of salsa
- 1 tbsp of chili powder
- 1 tsp of cumin
- 1 tsp of garlic powder
- 1/2 tsp of salt
- 1/4 tsp of black pepper
- Optional toppings: shredded cheese, sour cream, chopped cilantro
Instructions

Place the chicken breasts in the slow cooker.

In a separate bowl, combine the black beans, corn, diced tomatoes, salsa, chili powder, cumin, garlic powder, salt, and black pepper. Mix well.

Pour the mixture over the chicken in the slow cooker, making sure it covers the chicken evenly.

Cook on low heat for 4 hours, or until the chicken is cooked through and tender.

Shred the chicken using two forks and mix it well with the sauce.

Serve the Santa Fe chicken over rice or tortillas, and top with your favorite optional toppings.
