  • 8-10 Santa Fe Hatch chilies
  • 2 cloves of garlic
  • 1 small onion, diced
  • 1 tbsp olive oil
  • 1 cup chicken or vegetable broth
  • 1/2 cup fresh cilantro
  • 1 tsp cumin
  • Salt and pepper to taste

Instructions

  1. Preheat the broiler in your oven.

  2. Place the Hatch chilies on a baking sheet and broil until the skin is charred and blistered.

  3. Remove the chilies from the oven and let them cool. Once cooled, peel off the skin and remove the stems and seeds.

  4. In a blender or food processor, combine the peeled chilies, garlic, onion, olive oil, broth, cilantro, cumin, salt, and pepper. Blend until smooth.

  5. Transfer the sauce to a saucepan and simmer over low heat for 15-20 minutes, until slightly thickened.

  6. Taste and adjust the seasoning if needed.
