How To Make CPK Santa Fe Power Bowl Recipe
A hearty and nutritious bowl consisting of grilled chicken, avocado, black beans, corn, brown rice, and spicy lime dressing.
Serves:
Ingredients
- 4 boneless skinless chicken breasts
- 1 tsp chili powder
- 1 tsp paprika
- 1/2 tsp cumin
- salt and pepper to taste
- 1 tbsp olive oil
- 1 cup cooked brown rice
- 1 cup canned black beans, drained and rinsed
- 1 cup frozen corn, thawed
- 1 avocado, diced
- 1/4 cup chopped fresh cilantro
- For the Spicy Lime Dressing:
- 1/4 cup lime juice
- 2 tsp honey
- 1/2 tsp chili powder
- 1/4 tsp cumin
- 1 garlic clove, minced
- 1/4 cup olive oil
- salt and pepper to taste
Instructions

Preheat grill to medium-high heat.

In a small bowl, mix together chili powder, paprika, cumin, salt, and pepper. Rub the mixture onto both sides of the chicken breasts.

Once the grill is hot, brush the chicken with olive oil and grill for about 6-7 minutes on each side or until cooked through.

While the chicken is cooking, prepare the rice according to package instructions.

In a small bowl, whisk together lime juice, honey, chili powder, cumin, and garlic. Slowly whisk in olive oil until emulsified. Season with salt and pepper to taste.

Divide the cooked rice into 4 bowls. Top each bowl with black beans, corn, and diced avocado.

Once the chicken is cooked, slice it into strips and divide it among the bowls.

Drizzle the spicy lime dressing over each bowl and garnish with chopped cilantro.
