How To Make Buffalo Chicken Lettuce Wraps

These lettuce wraps are filled with slow-cooked buffalo-flavored shredded chicken. It’s a great way to enjoy buffalo chicken without as much fat.

Ingredients

For Chicken:

  • 24ozchicken breasts,boneless and skinless
  • 1celery stalk,diced
  • ½onion,diced
  • 1clove garlic,minced
  • 16ozfat free low sodium chicken broth
  • ½cupcayenne pepper sauce

For Wraps:

  • 6large lettuce leaves,Bibb or Iceberg
  • cupscarrots,shredded
  • 2large celery stalks,cut into 2 inch matchsticks

Instructions

  1. In a slow cooker, combine chicken, onions, celery stalk, garlic and broth (enough to cover the chicken, using water if the can of broth isn’t enough).

  2. Cover and cook on High 4 hours.

  3. Remove the chicken from pot, reserve ½ cup broth and discard the rest.

  4. Shred the chicken with two forks, return to the slow cooker with the ½ cup broth and the hot sauce, and set to on High for an additional 30 minutes. Makes 3 cups of chicken.

  5. To prepare lettuce cups, place ½ cup buffalo chicken in each leaf, top with ¼ cup shredded carrots, celery, and dressing of choice. Wrap up and start eating!
