Ingredients

  • 4 cups of watermelon, diced
  • 1 pound of cooked prawns
  • 2 avocados, peeled, pitted, and sliced
  • 1/4 cup of red onion, thinly sliced
  • 1/4 cup of fresh mint leaves, chopped
  • 1/4 cup of fresh cilantro leaves, chopped
  • 1/4 cup of feta cheese, crumbled
  • Juice of 1 lime
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the diced watermelon, cooked prawns, sliced avocados, red onion, mint leaves, and cilantro leaves.

  2. In a small bowl, whisk together the lime juice, salt, and pepper.

  3. Pour the lime dressing over the watermelon mixture and gently toss to combine.

  4. Sprinkle the crumbled feta cheese on top.

  5. Serve chilled and enjoy!
