Ingredients

  • 2 cans of tuna, drained
  • 1/2 cup diced onion
  • 1/2 cup diced bell pepper
  • 1/4 cup sliced black olives
  • 2 cloves of garlic, minced
  • 1 tsp cumin
  • 1 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 sheets of refrigerated pie crust
  • 1 egg, beaten (for egg wash)

Instructions

  1. Preheat the oven to 375°F (190°C).

  2. In a large bowl, combine the tuna, onion, bell pepper, black olives, garlic, cumin, paprika, salt, and black pepper. Mix well.

  3. Roll out one sheet of pie crust on a lightly floured surface. Using a round cutter or a glass, cut out circles from the crust.

  4. Place about 1 tablespoon of the tuna filling onto each circle of pie crust.

  5. Fold the circle in half to form a half-moon shape. Pinch the edges to seal. Repeat with the remaining circles and filling.

  6. Place the empanadas on a baking sheet lined with parchment paper.

  7. Brush the empanadas with the beaten egg wash.

  8. Bake in the preheated oven for 25-30 minutes, or until the crust is golden brown.

  9. Serve the Tuna Empanada Pie warm and enjoy!
